For strippers I've used nothing but Meisei Hotweezers™ since 1983, as shown here:

These are best used on Teflon wire which makes up about 95% of everything I've worked on professionally since the 80's.
At the low end of the money scale are the Ideal T-strippers. Used
correctly these things have never let me down in a pinch. There is no reason anyone should be using a kitchen knife when these cost about $8-10 bucks (and no cheaping out and settling for the $4 dollar hardware store version... not kidding!
) If anyone wants to know what "correctly" means just ask.
For "no shock" diagonal cutters I use only Zircon or Lindstrom, and Diamond for heavier wire. "No shock" is required for trimming the component leads of glass bodied parts, diodes, some resistor types, etc... so these parts don't fracture when you trim them after soldering.
For the outer jacket on coax or multi-conductor wire (Teflon or PVC), I use a very sharp single edged razor blade.
