These are the tubes I ordered from The tube store. The 12AX7s are right but the other three don't match up with the numbers on my voltage chart for the 18 watt Plexi.

Yes they are. 7189=EL84, 6CA4 = EZ81 (rectifier)

7189 tubes are basically El84s designed to take higher plate voltages & more current. I have some in my Scott stereo amp

However, if you open up a 7189 you will find a small beam tetrode inside, and not a true pentode - EL84s are pentodes. In other words 7189s are tetrodes designed to give characteristics very similar to EL84s, but they're not actually true EL84s. RCA didn't want to have to pay royalties to Philips, who owned the power pentode patents. So yes, they are great substitutes for EL84s, and many folks say they prefer them over regular EL84s. Apart from the increased ruggedness, they will give slightly later breakup (which may not be a bad thing) and won't suffer from the tendency for fizziness some EL84s have. So overall, you've made a great purchase there.
