I like Sozos for a classic Marshall tone. They also help tame an overly bright amp (like a Marshall or Vox). But they aren't perfect for every situation. In my channel switching amp I use Orange Drops for the Clean channel to get a more Fendery vibe. I use Sozos on the Dirty channel because they emphasize that Marshall honk we all love.
I have also used Mallories and BBQ's Mallory clones and they work well too, but are brighter. But that's fine too, if that's what you want.
And yes, Sozos take 10-20 hours to break in and sound a lot smoother and less grainy afterward.
Since the Mallories or Sozos needed for coupling in an amp are about $20 for either, I think it is a good idea to experiment with both and use what you like.
In one build I've got the Webers, Mallories and Sozos and the amp sounds great, so there's no rule you can't mix and match either!
