I'm building a Tiny Terror clone using a layout i've drawn up from a schematic i got from 18watt.com/Ampage. I was planning on using IN1007 rectifer diodes for the clone. Would a standard 4 diode bridge be possible with them? Also, the schematic calls for a 10nF cap across the bridge. What would the purpose of this cap be and what kind of rating is needed? I figured 1KV just to be safe but would i get away with 630V? Its a 15 watt amp with the HT windings producing up to 290V.

1N4007s will work just fine. And yes, you can build a bridge with them. The 10nfs are added to lower switching noise pollution. You don't have to add them. If you use the Ultra FRED style diodes (like UF1N4007), then you don't really need the caps either.

People in the UK can buy fast recovery rectifiers from Maplin which work like FREDs. I recommend using them for reducing power supply buzz.
