A "low input" usually is a padded input, while the "high input" is actually the stock circuitry. As for their use, it depends what you want from your amp; more gain, use the high side, more headroom, the low side.
Yes... There is a cool diagram somewhere, but the switching jacks change a resistor network on the inputs.

Well it depends. For me I use the low input when I want it sounding cleaner, the hi more dirty. If you had a low output guitar, you might prefer the hi input to give you the best tonal options. Conversely, if you are overloading the preamp and don't like the sound, try the low input. All up to you
